Smoked Jalapeno Scalloped Potatoes
1 jar of Fiesta Juan’s Smoked Jalapeno Salsa
1 8oz block of cream cheese
5 lbs. of red potatoes, peeled & sliced into 1/4 inch slices
1 tsp of cream of tartar
1/4 lb. of bacon, cut into 1” pieces, browned & drained
Salt & pepper
½ quart of whipping cream
1 pint of half-and-half
Preheat oven to 350 degrees. Rinse sliced potatoes with water and toss with cream of tarter. Layer potatoes and bacon in a lightly greased baking dish, sprinkling salt and pepper on each layer. Mix the Smoked Jalapeno Salsa with the cream cheese. Mix the Salsa and cream cheese mixture with whipping cream and half-and-half in separate dish and pour over potatoes. Cover dish with foil and bake for 1 hour or until potatoes are tender. Remove foil and broil for an additional 8-10 minutes or until potatoes are lightly brown. Yield 8-10 servings
